There’s something about the simplicity of Kalua Pork and Cabbage that keeps me coming back. It’s one of those humble, comforting dishes that doesn’t look fancy but delivers huge on flavor.

At the festival, the biz will be serving a truffle Spam saimin — garlic truffle dashi, saimin noodles, tocino Spam, kamoboko, tamago, green onions and fried garlic — and kalua pork Spam nachos.

Serving up classics like kalua pork, garlic shrimp and loco moco, the pop-up restaurant turned brick-and-mortar “Kau Kau” has gained a cult following for their authentic family recipes.

The meal will include teriyaki chicken, Kalua pork, and more. All proceeds benefit the Western Polynesian Club so it can grow and continue its mission of sharing traditional dance and culture.
