T-bone and porterhouse cuts also represent a smaller percentage of the entire cow. From a whole bovine, you can get only about half a dozen T-bone steaks, and even fewer of the porterhouse variety.

The porterhouse is that beautiful cut of meat with a large, T-shaped bone in the middle—the larger side represents the strip loin and the smaller side is a portion from the tenderloin.
