I haven't camped there with horses but I have been in that area. You will camp in the Blue Stem campground. There are two equestrian specific (though others can use them) trails that go out from there. Both are quite long but are out and back trails. The north trail goes to the far north end of the park, ending at a small lake. Note that mountain bike trails are also in the area, but I'm not sure if they share with horses. The south trail goes through the park, through the interpretive trail near the headquarters, under the highway, then connects up with the Ray Roberts greenbelt trail. Google maps satellite view, combined with a PDF park map found on the parks web site will show you where it all is. I suggest you bring plenty of shade as the equestrian area is very sunny.
